Clam Miso Soup: A Delicious Dish for Liver Health
This is a nutritious clam miso soup that is good for children and adults alike, known for its beneficial properties for liver health. It’s also a perfect way to regain energy during the summer!
Main Ingredients- 1 large bowl of fresh clams (Dashilgi)
- Approx. 2,000 KRW worth of pumpkin leaves (about 3-4 large leaves)
- 1 medium onion
- 3 small-sized spicy green peppers (Cheongyang chili peppers)
Seasoning- 2 Tbsp Miso paste
- A pinch of red pepper flakes (optional)
Flavor Adjustment- A splash of Korean soy sauce (Joseon Ganjang) or anchovy sauce

Cooking Instructions
Step 1
First, soak the fresh clams in water for about a day to purge them of any grit. Then, wash them thoroughly with salt water, scrubbing to remove any dirt. If the clams are alive, they can be an interesting sight for children to observe!

Add 2 tablespoons of miso paste to boiling water, and then add the purged clams. Boiling them in this way helps the clam meat to come out more easily as they open up. The best time to remove them is when they start to open their shells!

Once boiled, remove the clams from the water. Now, carefully extract the clam meat from each shell. They come out quite nicely, don’t they?

Next, prepare the washed pumpkin leaves!

Bring the water to a rolling boil. Then, take the prepared pumpkin leaves and rub them vigorously between your hands as you add them to the boiling water. This rubbing action helps to soften the leaves. Afterwards, add the chopped onion and spicy green peppers to the pot.

Boil the vegetables in the water over high heat for 10 minutes. Towards the end of this period, add the prepared clam meat. This allows the clam’s flavor to infuse into the broth, creating a richer taste. Mission accomplished!
