How to Make a Thick and Savory Cream Pasta [SUB]

Pasta Ingredients
  • Spaghetti 100g
  • Onion 1/2 (finely chopped)
  • Garlic 7 cloves (minced)
  • Cheddar cheese 1 slice
  • Heavy cream 180g
  • Milk 140g

Sauce Seasoning
  • Olive oil, a drizzle
  • Ground black pepper, to taste
  • Oyster sauce 1 Tbsp
  • Salt 1/2 tsp
  • Fresh parsley (optional, for garnish)

Cooking Instructions

Step 1

Before you begin, it’s helpful to watch the entire video once and then follow along with the photos. This will make the cooking process much easier and allow you to follow with greater skill.

Step 2

First, bring a generous pot of water to a boil. Add 1/2 tsp of salt and cook the spaghetti (100g) for about 1 minute less than the package directions. Reserve about 1-2 ladles of the pasta water before draining.

Step 3

Heat a wide pan over medium-low heat with a good drizzle of olive oil. Add the minced garlic (7 cloves) and gently sauté until fragrant and lightly golden. Be careful not to burn the garlic.

Step 4

Once the garlic is aromatic, add the chopped onion (1/2) and sauté over medium-low heat until the onion becomes translucent and sweet.

Step 5

After the onion is well softened, reduce the heat to low. Pour in the heavy cream (180g), stirring gently. Be mindful of the heat to prevent the cream from boiling over.

Step 6

Once the cream is slightly warmed, add the milk (140g) and mix well to create a smooth cream base for your sauce.

Step 7

Add the slice of cheddar cheese and stir until it’s completely melted and incorporated into the sauce, ensuring there are no lumps. This will add richness and a delightful savory flavor.

Step 8

Stir in 1 Tbsp of oyster sauce for an extra layer of umami. You can adjust the amount of oyster sauce according to your preference.

Step 9

With the sauce smooth and well combined, add the drained spaghetti to the pan. Gradually add the reserved pasta water while tossing the pasta and sauce together.

Step 10

Continue to add pasta water bit by bit as needed to achieve your desired sauce consistency. The starchy water helps the sauce coat the pasta beautifully and creates a velvety texture.

Step 11

Sauté for another 1-2 minutes over medium-low heat, allowing the sauce to thicken and cling to the pasta, creating that desirable ‘tkudak’ (thick and rich) texture. Adjust heat as necessary to prevent drying out.

Step 12

Taste the pasta and add a pinch of salt if needed. Remember that the oyster sauce and cheese already provide saltiness, so taste before adding more.

Finish with a generous grind of black pepper. Freshly ground pepper will significantly enhance the overall flavor of your pasta.
