Main Ingredients
- 2kg beef short ribs
- 1/2 cup ginkgo nuts
- 1/2 cup jujubes (red dates)
- 8 pieces daikon radish
- 1 carrot
- 1 onion
- 1 bulb garlic (or 10-15 cloves peeled garlic)
- 1/2 cup black garlic cloves (peeled)
- 1/2 cup black garlic extract
- 1 large stalk of green onion (cut into large pieces)
Braising Sauce
- 1 cup soy sauce (approx. 200ml)
- 1 cup sugar (approx. 200g)
- 1/2 cup corn syrup or oligosaccharide (approx. 100ml)
- 1 tsp black pepper powder
- 2 tsp grated ginger (or 1 tsp ginger powder)
- 1/2 cup mirin (rice wine for cooking) (approx. 100ml)
- 2 cups water (approx. 400ml)
- 1 cup soy sauce (approx. 200ml)
- 1 cup sugar (approx. 200g)
- 1/2 cup corn syrup or oligosaccharide (approx. 100ml)
- 1 tsp black pepper powder
- 2 tsp grated ginger (or 1 tsp ginger powder)
- 1/2 cup mirin (rice wine for cooking) (approx. 100ml)
- 2 cups water (approx. 400ml)
Cooking Instructions
Step 1
First, trim any excess fat from the beef short ribs. Soak them in cold water for at least 2 hours, changing the water periodically, to remove blood. Rinse the ribs under running water once they are drained.

Prepare the vegetables and aromatics that will enhance the flavor of the braised ribs. Cut the daikon radish and carrot into large cubes, then round off the edges to prevent them from breaking apart during cooking and for a more appealing presentation. Prepare the jujubes, ginkgo nuts, peeled black garlic cloves, large pieces of green onion, and onion. Feel free to add other ingredients like chestnuts or shiitake mushrooms according to your preference.
Step 3
In a bowl, combine the soy sauce, sugar, corn syrup (or oligosaccharide), mirin, black pepper powder, and grated ginger (or ginger powder) to create the braising sauce. Mix in the black garlic extract thoroughly.

Add the prepared braising sauce to the drained short ribs and mix well. Let it marinate for at least 30 minutes in the refrigerator. This allows the flavors to penetrate the meat, resulting in a richer taste.

Now, let’s start cooking. Place the marinated ribs, sliced onion (about 1 cm thick), and 2 cups of water into a heavy-bottomed pot or Dutch oven. Bring to a boil over high heat, then reduce the heat to medium once boiling. Cover with a lid and simmer for at least 50 minutes, or until the ribs are tender. Cooking for a sufficient amount of time is key to achieving tender ribs.
Step 6
Once the ribs are partially cooked, add the daikon radish pieces and continue to simmer for another 15-20 minutes, or until the radish is about half cooked. The black garlic extract will deepen the color of the ribs to a rich, appetizing hue.

Finally, add the carrots, ginkgo nuts, jujubes, and large pieces of green onion. Simmer for another 5-10 minutes until all the ingredients are tender. Cooking over low to medium-low heat will help bring out the natural flavors of each ingredient.
