A simple and satisfying Tteok-Mandu-Guk made with a rich beef bone broth. This recipe is perfect for a quick yet comforting meal, featuring chewy rice cakes and flavorful dumplings in a deeply savory broth.
Key Ingredients for Tteok-Mandu-Guk- 1/2 bowl of rice cake slices for soup (approx. 100g)
- 5 dumplings (choose your favorite type)
- 1/4 stalk of green onion, finely chopped (about 2 Tbsp)
- 1 Tbsp minced garlic
- Salt or soup soy sauce, to taste
- Pinch of black pepper
- Pinch of shredded laver (gim) for garnish
- 2.5 cups of pre-made beef bone broth (approx. 500ml)
Cooking Instructions
Step 1
First, rinse the rice cake slices under running water and then soak them in cold water for about 10 minutes. This helps the rice cakes become softer and chewier. Prepare your dumplings and finely chop the green onion. Have your minced garlic ready.
Step 2
Take a deep pot and pour in 2.5 cups of the pre-made beef bone broth. Bring it to a boil over high heat. Once the broth is boiling vigorously, add the soaked rice cake slices and cook for 2-3 minutes until they float to the surface. When the rice cakes start to cook, add the minced garlic and the dumplings. Reduce the heat to medium-low and simmer for about 3 more minutes, or until the dumplings are cooked through and the rice cakes are tender. Be careful not to let the broth become too cloudy. Season with salt or soup soy sauce to your preference.
Step 3
This is the final cooking step. Once the dumplings and rice cakes are cooked, add the finely chopped green onion to the pot and simmer for just one more moment. The subtle aroma of the green onion will infuse the broth, enhancing its flavor. Avoid overcooking the green onions, as they can become mushy.
Step 4
Ladle the hot Tteok-Mandu-Guk into a serving bowl. For an extra touch, sprinkle with shredded laver (gim) and a pinch of black pepper. Enjoy this comforting and delicious soup while it’s hot!
