- Milk or egg wash, as needed (for brushing the tops)
Cooking Instructions
Step 1
In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well combined. Add the cold, cubed butter to the flour mixture. Using a pastry blender or a scraper, cut the butter into the dry ingredients until the mixture resembles coarse crumbs with some pea-sized pieces of butter still visible. Work quickly to prevent the butter from melting. Coating the flour around the butter pieces will help create a flakier scone.
Step 2
Add the softened cream cheese to the bowl with the flour and butter mixture. Use the scraper to break down the cream cheese into smaller pieces and mix it evenly with the dry ingredients. Don’t worry if there are still some small lumps of cream cheese; they will melt and add wonderful flavor as the scones bake.
Step 3
Pour in the cold milk and gently mix with a spatula or scraper until just combined. Be careful not to overmix, as this can develop the gluten and result in tough scones. Stop mixing when you no longer see large streaks of dry flour.
Step 4
Gather the dough into a ball, wrap it tightly in plastic wrap, and refrigerate for at least 30 minutes. Chilling the dough makes it easier to handle and allows the flavors to meld, resulting in a more delicious scone.
Step 5
On a lightly floured surface, turn out the chilled dough. Gently fold the dough over on itself two or three times. This creates layers and texture in your scones. Avoid overworking the dough, as this can make the scones tough.
Step 6
Divide the dough into 6 to 8 equal portions using a scraper. For a beautiful golden-brown finish, brush the tops of the scones with a little milk or egg wash. Bake in a preheated oven at 180°C (350°F) for 20-25 minutes, or until the tops are golden brown and a skewer inserted into the center comes out clean. Enjoy your delicious cream cheese scones!
