Learn how to make a hearty and delicious Beef and Seaweed Soup (Miyeokguk), featuring tender beef and silky seaweed. This recipe is perfect for special occasions or a comforting everyday meal that will have you wanting seconds.
Ingredients
- Dried seaweed 30g
- Beef (for soup) 100g
- Minced garlic 1 tsp
- Fish sauce (or soy sauce) 3-4 Tbsp
- Water 6 cups (approx. 1.2L)
- Pepper, a pinch
- Sesame oil, a little
Cooking Instructions
Step 1
First, soak the dried seaweed (30g) in plenty of cold water for about 15-20 minutes until fully rehydrated. Gently rinse the softened seaweed under running water 1-2 times until the water runs clear. Squeeze out excess water and cut into bite-sized pieces.
Step 2
Prepare 100g of beef, suitable for soup cuts like brisket, round, or thinly sliced beef for bulgogi. Cut the beef into relatively large pieces, about 1cm thick, for a pleasant texture. (Tip: Gently pat the beef with paper towels to remove excess blood for a cleaner tasting broth.)
Step 3
Heat a pot over medium-high heat with a little sesame oil. Add the cut beef and 1 tsp of minced garlic. Stir-fry until the beef is lightly browned and fragrant. This step helps develop a richer flavor.
Step 4
Once the beef is well-seared, add the rehydrated seaweed to the pot. Pour in 2 Tbsp of fish sauce and continue to stir-fry for another 1-2 minutes. This allows the seaweed to absorb the flavors and deepens the overall taste.
Step 5
Now, pour in 6 cups (approx. 1.2L) of water. Bring to a boil over high heat, then reduce the heat to medium-low, cover the pot, and simmer for about 30 minutes. Cooking for a longer duration will ensure the seaweed becomes tender and the beef broth is richly flavored.
Step 6
After simmering for about 30 minutes, taste the soup and add an additional 1-2 Tbsp of fish sauce (or to your preference) to adjust the seasoning. If it’s not salty enough, you can add a bit more fish sauce or a dash of Korean soup soy sauce. Simmer for a few more minutes until the flavors meld. Your delicious Beef and Seaweed Soup is ready!
