Create a rich and deeply flavorful curry rice dish, harmonizing the sweetness of carrots with the savory taste of pork, using this special carrot curry recipe inspired by the show ‘Master in the House’. Instead of pureeing the carrots, this recipe finely dices them, preserving their natural texture and sweetness. We’ve enhanced the curry’s depth by adding garam masala and turmeric powder for an even more robust flavor. For those who enjoy a bit of heat, we’ve used spicy curry powder. The recipe features pork jowl (galmaegisal) fried to a crisp for added flavor, though ham can be a suitable substitute. This recipe is designed for ease of preparation at home with common ingredients, ensuring anyone can create a delicious meal. Elevate your ordinary days or celebrate special occasions with this delightful carrot pork curry, bursting with flavor and aroma!
Main Ingredients- Pork jowl (galmaegisal) 500g (substitute with ham if preferred)
- Potatoes 3 medium
- Onions 3 medium
- Carrots 2 medium
Cooking Instructions
Step 1
First, prepare the pork jowl. Heat a generous amount of oil in a pan and fry the pork until it’s golden brown and crisp. Add the minced garlic and sauté for about 1 minute until fragrant, infusing the pork with garlic flavor.
Step 2
Once the pork turns grayish, add a large quantity of roughly chopped onions to the pan. Cover and let them cook until softened. After the onions have cooked down, stir in the soy sauce and sauté together for another minute.
Step 3
Now, let’s add some smoky flavor. Briefly use a culinary torch to flambé the ingredients in the pan. This quick burst of flame adds a delicious char and depth to the dish.
Step 4
Add the diced potatoes and carrots to the pan. Stir and sauté them with the pork and onions. Incorporate the butter and continue to sauté; this will make the vegetables and meat wonderfully rich and fragrant. Stir well until the butter has melted and coated all the ingredients.
Step 5
Once the butter is well incorporated and coats the ingredients, add the spicy curry powder and garam masala. Stir continuously while cooking for about 1-2 minutes, until the spices are fragrant and evenly distributed. Be careful not to burn the spices.
Step 6
Pour in the broth or water (700ml) and add the turmeric powder. Stir well to combine everything. Bring the mixture to a boil, then reduce the heat and simmer. (If you don’t have broth, water is fine, but a splash of seafood broth or chicken stock will add more depth).
Step 7
Continue to simmer until the curry thickens to your desired consistency and the flavors have melded. Taste the curry and adjust the seasoning if needed by adding a pinch of salt or more curry powder.
Step 8
Prepare your serving plate. Spoon a generous portion of freshly cooked rice onto one half of the plate.
Step 9
Ladle the thick and rich carrot pork curry over the other half of the rice. This finished dish offers a delightful balance of sweet onions and carrots, tender potatoes, and the robust flavors of turmeric and curry. Even using ham instead of pork will result in a delicious fusion curry. Enjoy your meal with this special carrot curry, creating a memorable culinary experience!
