Ingredients

  • 300g fresh pork belly (samgyeopsal)
  • 1 bag (approx. 200g) fresh bean sprouts
  • 1 cup (200ml) pre-soaked rice
  • Mirin (cooking wine), to taste
  • Minced garlic, to taste
  • Cooking oil, a small amount
  • Savory seasoning sauce, to taste

Cooking Instructions

Step 1

First, prepare fresh, high-quality pork belly (samgyeopsal). (Tip: Using fresh pork like ‘Dodram Handon’ will enhance the flavor.)

Cut the prepared fresh pork belly into bite-sized strips, about 1cm thick. Trim and wash the bean sprouts thoroughly, then drain them. Rinse the rice and soak it for about 30 minutes. Coarsely mince the garlic.

Lightly grease the bottom of a pressure cooker with cooking oil and add the sliced pork belly. Sauté over medium heat until it starts to render its fat. Once partially cooked, add the minced garlic, mirin, and a pinch of black pepper, and continue to stir-fry to remove any gaminess and enhance the aroma. When the pork belly is nicely browned, add the soaked rice and pour in enough water to cover the rice.

Generously pile the washed bean sprouts on top of the pork belly and rice mixture in the pressure cooker. Spread them evenly over the rice.

Secure the lid of the pressure cooker. Cook on high heat until the whistle blows, then reduce the heat to low and steam for about 10-15 minutes. Once cooked, turn off the heat and let the pressure release naturally. Carefully open the lid and gently fluff the rice with a spatula, being careful not to mash the grains.

While the rice is cooking, prepare the savory seasoning sauce. (Tip: Mix soy sauce, chopped green onions, minced garlic, chili powder, sesame oil, and toasted sesame seeds for a delicious sauce.)
