How to Make Delicious Sagol Kalguksu Using Store-Bought Beef Bone Broth and Dried Kalguksu Noodles
Store-bought beef bone broth is a pantry staple I often reach for because it easily adds rich flavor to any soup dish. Today, we’ll be using Ottogi Beef Bone Broth to create a wonderfully flavorful Sagol Kalguksu. To make it even simpler, this recipe uses dried kalguksu noodles instead of fresh ones, ensuring a quick and satisfying meal.
Main Ingredients- Dried Kalguksu Noodles 200g (for 2 servings)
- Store-bought Beef Bone Broth 500ml
- Water 100ml
- Eggs 2
Cooking Instructions
Step 1
Bring a generous amount of water to a rolling boil in a large pot. Once boiling, add the 200g of dried kalguksu noodles (for 2 servings) and cook for 8 minutes. Stir the noodles occasionally with chopsticks to prevent them from sticking together. Using dried noodles makes this a wonderfully convenient way to enjoy kalguksu.
Step 2
Crack 2 eggs into a bowl and add 2 pinches of salt. Whisk the eggs thoroughly with a whisk until smooth and no lumps remain.

Lightly grease a heated frying pan with cooking oil. Pour the beaten egg mixture evenly into the pan. Cook over medium-low heat, adjusting the heat as needed. Once one side is cooked, carefully flip the egg mixture and cook the other side until golden brown, creating a thin egg crepe.

Remove the cooked egg crepe from the pan and let it cool slightly. Once cooled, roll it up like a sushi roll, cut it into 4 equal pieces lengthwise, and then thinly julienne it. These colorful egg strips will add a delightful texture and visual appeal to your noodle soup.

Wash and thinly chop about a handful of green onions for garnish. The fresh, pungent aroma of the green onions pairs wonderfully with the rich beef bone broth.

Drain the cooked kalguksu noodles using a colander and rinse them briefly under cold water. This step helps to make the noodles chewier and removes excess starch for a cleaner taste. Lightly drain the noodles.

Pour 500ml of store-bought beef bone broth into a pot and bring it to a boil over high heat. Once it starts boiling, add 100ml of water to adjust the consistency.

When the broth is at a rolling boil, add 0.5 Tbsp of minced garlic and 0.3 Tbsp of salt to season. Remember to adjust the salt to your preference, considering the saltiness of the store-bought broth.

Finally, add the chopped green onions and let the soup simmer for another moment. The refreshing taste of the green onions complements the beef bone broth, adding a deeper layer of flavor.

Place the prepared kalguksu noodles into a serving bowl. Top generously with the julienned egg crepes and shredded seaweed (gim-garu).
