Broth Ingredients- 700ml Store-bought beef bone broth (Sagol Gomtang)
- 200ml Water
- 1 Tbsp Salted shrimp (Saeu-jeot)
- 1 Tbsp Minced garlic
- 1 Pinch Ginger powder
Cooking Instructions
Step 1
In a pot, combine the 700ml of store-bought beef bone broth and 200ml of water. Add 1 Tbsp of minced garlic, 1 Tbsp of salted shrimp, and a pinch of ginger powder. Bring this mixture to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 5 minutes to allow the flavors to meld and season the broth.
Step 2
Prepare the sundae and offal by steaming them in a steamer basket for approximately 10-15 minutes. Steaming helps the sundae maintain its shape and cook evenly. Once steamed, let them cool slightly before cutting them into bite-sized pieces, about 1.5 cm thick.

When the seasoned beef bone broth is at a rolling boil, carefully add the sliced sundae and offal. **It is crucial not to overcook them.** Overcooking can cause the sundae to burst or fall apart. Simmer for just 1-2 minutes after adding them, ensuring they are heated through and infused with the broth’s flavor.

Just before turning off the heat, generously sprinkle in 2-3 Tbsp of perilla seed powder for a rich, nutty aroma. Add a pinch of black pepper according to your preference.
