Ingredients- 30g dried seaweed (miyeok)
- 200g beef (for soup)
- 1 Tbsp minced garlic
- 2 Tbsp soy sauce for soup (guk-ganjang)
- 1/2 Tbsp salt (adjust to taste)
- 3000ml water
Cooking Instructions
Step 1
Before you start cooking, prepare the dried seaweed. Soak it in cold water for about an hour until it becomes soft and pliable. This process removes any toughness, resulting in a tender texture.
Step 2
For the beef, instead of patting it dry with paper towels, let’s soak it in cold water for about 30 minutes to remove the blood. Soaking it gently allows the blood to be released naturally, leading to a cleaner, more refined soup broth.
Step 3
Now, pour 3000ml of water into a pot and add the beef you’ve soaked to remove blood. Once the water begins to boil, you’ll notice impurities and foam rising to the surface. Skim these off thoroughly to ensure a clear and pristine broth. This step is the first key to a delicious soup base.
Step 4
While the soup is simmering, take this opportunity to remove the beef temporarily and cut it into bite-sized pieces. Since it’s already been partially cooked and had impurities removed, it will be tender when added back later.
Step 5
Add 1 tablespoon of minced garlic to the broth, which you’ve carefully prepared by removing blood and boiling. Continue to simmer over medium heat for about 30 minutes. The garlic will infuse the broth with its aromatic essence, enhancing the overall flavor.
Step 6
Take a short break to thoroughly rinse the soaked seaweed 2-3 times under running water. Once rinsed, cut the seaweed into pieces that are easy to eat. Avoid making them too long for a more enjoyable eating experience.
Step 7
After simmering for 30 minutes, remove the beef that was set aside earlier. Then, add the prepared seaweed to the pot. Now, it’s time to develop the signature flavor of the seaweed soup.
Step 8
It’s time to season the soup. Add 2 tablespoons of soy sauce for soup (guk-ganjang) and 1/2 tablespoon of salt, stirring well. (You can adjust the amount of salt to your preference.) After seasoning, cover the pot and let it simmer gently over medium heat for another 30 minutes. The longer it simmers, the more the flavors of the seaweed and beef will meld into the broth, creating a richer taste.
Step 9
Finally, shred the beef that you set aside earlier along its grain and add it back into the seaweed soup. Simmer for a little longer, and your rich, deeply flavorful Beef Seaweed Soup will be perfectly complete! It’s the ideal soup for enjoying with a bowl of rice.
