Rich and Hearty Beef Seaweed Soup (Miyeokguk) Recipe

I’ve cooked a generous pot of beef seaweed soup, a favorite that I enjoy any time. I also received 1kg of premium Korean beef tenderloin from Nabi Hanwoo, which I used to make a simple breakfast spread with a hearty chop steak and plenty of vegetables. Seaweed soup is so delicious that I can eat a large bowl of it anytime! While cold seaweed soup is refreshing, a warm bowl is simply irresistible. I love it so much that I could eat two bowls of just the soup, without rice!

Main Ingredients

  • Beef brisket 200g
  • Dried seaweed (miyeok) 30g
  • Soy sauce for soup (guk-ganjang) 1 Tbsp
  • Fish sauce (or anchovy sauce) 1 Tbsp
  • Sesame oil 1 Tbsp
  • Rice water 3 cups (approx. 600ml)

Cooking Instructions

Step 1

Start your delicious seaweed soup journey by preparing rice water! The cloudy water left after rinsing rice adds a wonderfully rich and savory depth to the soup. Prepare about 3 cups.

Soak the dried seaweed in cool water for about 10 minutes until it’s fully rehydrated. Once softened, gently rub and squeeze the seaweed with your hands to clean it thoroughly. Drain the excess water using a colander.

Heat a pot over medium heat and add sesame oil. Add the prepared beef brisket and stir-fry. Adding 1 tablespoon of soy sauce for soup at this stage allows the beef to absorb the flavor deeply, making it even more delicious. Sauté until the beef is about halfway cooked.

Once the beef is partially cooked, add the drained soaked seaweed to the pot. Continue to stir-fry for another 2-3 minutes until the ingredients are well combined. Pour in the prepared rice water and bring to a boil over high heat. Once boiling, reduce the heat to medium and simmer for about 10 more minutes.

While fresh seaweed soup is delicious, I find that it tastes even better when it’s had a chance to rest and is reheated! The flavors meld and deepen beautifully over time, creating a richer taste experience.
