  • Seolleongtang (store-bought) for 1 serving (approx. 400-500ml)
  • Somen noodles for 1 serving (approx. 100g)
  • Green onion, 10cm length

First, prepare to cook the somen noodles. Add the somen noodles to a pot of generously boiling water. When the noodles start to boil vigorously, add about one cup of cold water. Repeating this process two to three times will result in chewier and more resilient noodles. Once cooked, rinse the noodles thoroughly under cold running water to wash away excess starch, which prevents the soup from becoming cloudy and the noodles from sticking together. Drain them completely in a colander.

Wash the green onion and thinly slice it crosswise. You can use both the white and green parts. The white parts will infuse the broth with a gentle aroma, while the green parts can be used as a garnish for color.
