The highly anticipated petasites (Mui-dae) are in season and abundant! This stir-fried petasites dish, made with nutty perilla powder, is an absolute must-have for your rice table. The slight bitterness is beautifully balanced by the rich nuttiness of the perilla powder, making it a favorite among all ages. Using pre-cleaned petasites makes preparation even easier.
Main Ingredients- 1 bunch pre-cleaned petasites (Mui-dae) (approx. 200g)
- 1/2 stalk scallion
Seasoning & Others- 2 Tbsp olive oil
- 1 Tbsp minced garlic
- 2 Tbsp perilla powder
- 2 Tbsp anchovy sauce (Myeolchi Aekjeot)
- Pinch of toasted sesame seeds

Cooking Instructions
Step 1
Using pre-cleaned petasites significantly reduces preparation time. Take one bunch of petasites, rinse them thoroughly under running water, and pat dry. (If using fresh petasites, you’ll need to peel, boil, and rinse them in cold water.)
Step 2
Cut the rinsed petasites into bite-sized pieces, about 4-5cm long. Finely chop or thinly slice the scallion.
Step 3
Heat 2 tablespoons of olive oil in a pan over medium-low heat. Add 1 tablespoon of minced garlic and stir-fry until fragrant, being careful not to burn the garlic. This creates a delicious garlic-infused oil.
Step 4
Once the garlic is fragrant, add the prepared petasites to the pan and stir-fry over high heat for a short while until they are slightly softened but still have a bite.
Step 5
Now it’s time to season. While salt is an option, using 2 tablespoons of anchovy sauce (Myeolchi Aekjeot) will add a deeper, more complex savory flavor. Add the anchovy sauce and stir well to coat the petasites.
Step 6
Reduce the heat to medium. Add 2 generous tablespoons of perilla powder – the key to its nutty flavor. Stir well to evenly coat the petasites. Cook for a short while, as overcooking the perilla powder can result in a bitter taste.

Add the sliced scallions and stir-fry briefly. The fresh taste of the scallions will enhance the dish.
Step 8
Finally, sprinkle with toasted sesame seeds to complete this appetizing petasites stir-fry. With the generous amount of perilla powder, you won’t need extra perilla oil; it’s already rich and delicious. Serve it over warm rice for a truly delightful meal!
