Ingredients- 300g beef for soup
- 100g Korean radish (mu)
- 2 Tbsp soup soy sauce (guk-ganjang)
- 1 Tbsp minced garlic
- 2 Tbsp sesame oil
- 1 stalk green onion
- Pinch of salt
- Pinch of black pepper

Step 1
Pat the beef for soup dry with paper towels to remove any excess blood. This step helps to create a clearer broth and reduces any gamey flavor.

In a large bowl, combine the beef with 2 Tbsp of soup soy sauce, a pinch of salt, a pinch of black pepper, 2 Tbsp of sesame oil, and 1 Tbsp of minced garlic. Marinating the beef beforehand allows the flavors to penetrate deeply, resulting in a more delicious soup.

Gently massage the marinade into the beef with your hands, ensuring it’s evenly coated. Let it marinate for about 10 minutes.

Heat a pot over medium heat, adding a little sesame oil if needed, and stir-fry the marinated beef. Cook until the beef is about 80-90% done and has turned a nice brown color. Stir-frying the beef well develops its rich flavor.

Once boiling, reduce the heat to medium-low, cover the pot, and let it simmer for 15-20 minutes, or until the radish is completely tender.

Skim off any foam or scum that rises to the surface during simmering using a spoon. This ensures a clean and clear broth. Taste the soup and adjust the seasoning with salt if needed.
