Main Ingredients- 5 fresh abalones
- Innards from 5 abalones
- 2/3 cup glutinous rice (approx. 80g)
- 2/3 cup regular rice (approx. 80g)
Cooking Instructions
Step 1
First, prepare the innards from 5 abalones. Place the abalone innards in a pot and mash them using the back of a ladle. For a smoother texture, you can also use a blender to finely purée them. Heat a little sesame oil in a pot over low heat and sauté the prepared abalone innards until fragrant, being careful not to burn them (about 2-3 minutes).
Step 2
Wash the glutinous rice and regular rice thoroughly and soak them in water for about 30 minutes. Drain the soaked rice well. Add the drained rice to the sautéed abalone innards and stir-fry them together. Continue to cook until the rice grains become translucent, about 2-3 minutes. This step helps prevent the rice from clumping and ensures it cooks evenly.
Step 3
Once the rice and innards are well sautéed, add a generous amount of water. About 5 to 6 times the volume of rice is a good starting point, but you can adjust the consistency to your liking. Bring the mixture to a boil over high heat, then reduce to medium-low heat. Stir continuously with a spatula to prevent sticking to the bottom of the pot, and let it simmer until the rice breaks down.
Step 4
When the porridge begins to boil vigorously, add the abalone meat, which should be cut into bite-sized pieces (usually 2-3 pieces per abalone). Continue to cook for a few more minutes after adding the abalone. Be careful not to overcook the abalone, as it can become tough. Cook just until the rice grains have softened and broken down nicely.
Step 5
Your rich abalone liver porridge is now complete! Season with salt or soy sauce to taste. Serve hot in bowls. A drizzle of sesame oil before serving will enhance the flavor even further. Enjoy!
