  • Rice water 2L

Seasoning & Aromatics
  • Minced garlic 2 Tbsp
  • Soy sauce for soup 2 Tbsp
  • Fish sauce (anchovy or tuna) 1 Tbsp
  • Sesame oil 2 Tbsp

Cooking Instructions

Step 1

Before starting, prepare your rehydrated dried seaweed, beef, and rice water. It’s best to soak the dried seaweed in cold water beforehand.

Step 2

Place the dried seaweed in cold water and soak for about 20 minutes until fully rehydrated. Rinse the soaked seaweed several times under cold water to remove any impurities.

Step 3

Drain the cleaned seaweed thoroughly in a colander. Then, cut it into bite-sized pieces (about 3-4 cm). Using pre-cut seaweed can save you time during cooking.

Step 4

Lightly rinse the beef under cold water to remove any blood. Pat the beef dry with paper towels after draining any excess water.

Step 5

In a deep pot, heat 2 tablespoons of sesame oil over medium heat. Add the drained beef and minced garlic, then stir-fry until fragrant and lightly browned. Sautéing with garlic enhances the flavor profile.

Step 6

Continue stir-frying the beef until it’s browned on all sides. This step helps to seal in the juices, resulting in a more tender and flavorful meat.

Step 7

Add the rehydrated seaweed to the pot and stir-fry with the beef for another 2-3 minutes. Once the seaweed turns a vibrant green, pour in the 2L of prepared rice water.

Step 8

Pour in plenty of rice water to enrich the broth’s flavor. If you don’t have rice water, you can use plain water or anchovy-kelp broth.

Step 9

Add 2 tablespoons of soy sauce for soup to season. You can start with 2 tablespoons and adjust the seasoning later to your preference.

Step 10

Add 1 tablespoon of fish sauce (anchovy or tuna) for an extra layer of umami. Fish sauce significantly enhances the depth of the soup’s flavor.

Step 11

Bring the soup to a rolling boil over high heat, then reduce the heat to medium-low and let it simmer gently for 10 to 20 minutes. The longer it simmers, the softer the seaweed becomes and the richer the broth’s flavor, making it even more delicious.

Step 12

Your rich, refreshing, and savory beef and seaweed soup is now ready! It’s the perfect soup to enjoy with a bowl of rice.

Step 13

Serve this hearty beef and seaweed soup with a bowl of warm rice. It’s not just filling; it’s like a nourishing tonic for your body. Enjoy your meal!
