Cheonggukjang & Basics

  • 1 packet Cheonggukjang (300g)
  • 1 handful aged kimchi (generous)

Abundant Vegetables

  • 1/2 Zucchini
  • 1/2 Daikon radish
  • 1/2 Potato
  • 1/2 Mushroom (any type)
  • 1/2 Carrot
  • 1/2 Onion
  • 2 Korean green chili peppers

Cooking Instructions

First, prepare the anchovy and kelp broth, which is the foundation for delicious Cheonggukjang. Start with 500ml, but you can increase it to 1,000ml if you prefer a thinner consistency. Boil dried anchovies and kelp for about 15-20 minutes to extract a deep flavor.

Lightly grease a pot with sesame oil and stir-fry the aged kimchi until slightly softened. Add the prepared vegetables (zucchini, daikon radish, potato, mushroom, carrot, onion) and the anchovy broth. Bring to a simmer over medium heat and cook until the vegetables are tender. The sweetness of the vegetables and the spiciness of the kimchi will meld together for an even richer taste.

Once all the vegetables are cooked, break up the firm tofu and add the Cheonggukjang, stirring well to combine without lumps. Simmer for no more than 10 minutes. Cheonggukjang’s nutrients can be lost and its unique aroma can dissipate if boiled for too long. Therefore, it’s best to cook it just until the ingredients are well blended. Finally, add the diagonally sliced Korean green chili peppers, green onion, and minced garlic, and let it simmer briefly once more. Your rich and savory Cheonggukjang is now complete!
