Main Ingredients- 2 cups rice water (approx. 400ml, for adjusting consistency)
- 2/3 cup prepared river snails (approx. 100g)
- 1/2 block firm tofu (approx. 150g)
- 1/2 onion (small)
- 2/3 cup chopped scallions
Cooking Instructions
Step 1
First, prepare 2 cups of rice water. You’ll use 1 cup for simmering the stew, and set aside the other cup to adjust the consistency later. Using rice water makes the Ganjang smoother and more mellow.
Step 2
In a bowl, combine 3 Tbsp Doenjang, 1 Tbsp Gochujang, 1/2 Tbsp minced garlic, and 1/3 Tbsp sugar. Pour in 1 cup of the reserved rice water and whisk until smooth, ensuring there are no lumps. Pre-mixing the seasonings helps them blend evenly during cooking for a more flavorful stew.
Step 3
Pour the dissolved seasoning mixture into a pot and add the remaining 1 cup of rice water. Bring it to a boil, then add the tofu (cut into 2cm cubes) and finely chopped onion. Simmer over medium-low heat for about 30 seconds until the vegetables are slightly tender.
Step 4
Next, add the chopped scallions and the prepared river snails. To prevent the snails from becoming tough, cook them for only about 30 seconds along with the scallions. This keeps their fresh, slightly chewy texture intact.
Step 5
