Pork-Loaded, Flavorful Aged Kimchi Stew Recipe
The best way to enjoy aged kimchi before making new kimchi! This aged kimchi stew, simmered to perfection with plenty of pork, offers a deep, spicy, and incredibly satisfying flavor. Prepare to crave another bowl!
Main Ingredients- 1/2 head of well-fermented aged kimchi
- 600g fresh pork shoulder or leg
- 4 Korean green chili peppers (cheongyang peppers)
- 1/2 onion

Step 1
First, cut the aged kimchi into bite-sized pieces. You can remove the tough inner core and gently shake off excess seasoning. Aim for pieces about 3-4cm in size. Cut the pork shoulder into similarly large, chunk-like pieces for a satisfying chew.
Step 2
In a pot, place the large chunks of pork first, then top with the cut aged kimchi. Add enough water to cover the kimchi completely. Since aged kimchi can vary in saltiness, it’s best to season lightly at first and adjust later. Add just half a tablespoon of salt to begin with and bring to a boil.
Step 3
Simmer over medium-high heat for about 15 minutes. During this time, the pork will become tender and the aged kimchi will develop a deep, savory flavor. Once the pork is almost cooked through, add the chopped Korean green chilies and the roughly chopped onion. Continue to simmer for another 5 minutes. The onion will add a natural sweetness to the broth, while the chilies provide a pleasant kick. This generously pork-filled kimchi stew is wonderfully spicy and refreshing.
