Stew Ingredients- 1/4 head fermented napa cabbage kimchi, chopped
- 1 pack soft tofu (silken tofu)
- 150g pork belly, cut into bite-sized pieces
- 1 fresh egg
- Broth ingredients (1 handful dried anchovies, 1 piece dried kelp, 1 handful onion peels)

Step 1
Begin by preparing all your ingredients. Chop the fermented napa cabbage kimchi into bite-sized pieces (about 2-3cm). Cut the pork belly into similar-sized pieces. Slice the green onion diagonally.

The secret to a delicious soft tofu stew lies in its flavorful broth! In a pot, combine water with dried anchovies, dried kelp, and onion peels. Bring to a boil and simmer over medium heat for 10 minutes to create a rich broth. Remove the anchovies and kelp, and set the broth aside.

Add the chopped kimchi and pork belly to a pot. You don’t need extra cooking oil; the fat from the kimchi and pork belly will render as they cook. Sauté over medium-low heat until the kimchi softens and the pork belly is lightly browned. This step deepens the flavor significantly.

Once the kimchi and pork belly are well-sautéed, pour in the prepared anchovy broth (or plain water). Add 1 tablespoon of minced garlic and 1 tablespoon of chili powder.
