Ingredients (Serves 60)

  • Curry powder 500g
  • Onions 3 (large)
  • Pork 500g (cut for curry or bite-sized pieces)
  • Carrot 1 (medium)
  • Milk 1L
  • Black pepper 50g

Cooking Instructions

Step 1

First, peel and thinly slice the 3 onions. Heat a generous amount of cooking oil in a pan over medium heat. Add the sliced onions and sauté slowly until they turn a gentle brown color. This caramelization brings out their sweetness and deepens the flavor. Once the onions are browned, add the 500g of pork and stir-fry until the meat is browned on all sides. Break up any clumps of meat as you stir.

Step 1

Step 2

Once the pork and onions are well-cooked, pour a generous amount of water into a pot. Add the 500g of curry powder and whisk until smoothly dissolved, ensuring there are no lumps. Then, pour in 1L of milk. Adding milk will make the curry creamier, richer, and contribute to its desired thick consistency. Bring the mixture to a simmer over medium-low heat.

Step 2

Step 3

Peel and thinly slice the medium carrot, then add it to the simmering curry pot. Season with 50g of black pepper and salt to taste. (Tip: For extra flavor, you can crumble in 1 chicken bouillon cube or add a pinch of paprika powder.) Let the curry simmer gently over low heat until it reaches your desired thickness, stirring occasionally to prevent sticking.

Step 3

Step 4

Boil the udon noodles in plenty of boiling water according to the package instructions. Once cooked to your liking, drain them and rinse briefly under cold water to enhance their chewy texture. Drain thoroughly and toss with a little olive oil or cooking oil to prevent them from sticking together.

Step 4

Step 5

Arrange the prepared udon noodles attractively in a large bowl. Generously ladle the rich, thick curry sauce over the noodles. Your delicious Curry Udon is now complete! Enjoy it while it’s hot.
