Traditionally, Seollal (Lunar New Year) tteokguk was made with a clear broth simmered from beef brisket and shank, not bone broth. The meat garnish was also not stir-fried; instead, boiled brisket and shank were shredded and mixed with minced garlic, sesame oil, and chopped scallions. While egg garnish was common then, it seems less so nowadays. Preparing the clear broth involves the tedious task of skimming off fat. This recipe offers a shortcut: using beef bone broth powder for the soup and a stir-fried ground beef garnish seasoned with soy sauce. Adding stir-fried zucchini and egg garnish provides beautiful color and completes this festive tteokguk.
Tteokguk Garnish Ingredients- 250g ground beef
- 3 Tbsp soy sauce for braising
- 2 Tbsp sugar
- 1 Tbsp plum extract
- 2 Tbsp minced garlic
- 1 tsp minced ginger
- 1/3 zucchini
- A pinch of salt
- 1/2 tsp minced garlic
- 3 Tbsp cooking oil
Tteokguk Ingredients- 3 Tbsp beef bone broth powder
- 700ml water
- 200g sliced rice cakes for tteokguk
- 3 spoonfuls of egg garnish
- 3 spoonfuls of stir-fried zucchini
- 3 Tbsp ground beef
- 3 Tbsp beef bone broth powder

Cooking Instructions
Step 1
Julienne the zucchini after washing it thoroughly. Heat 1 tablespoon of cooking oil in a pan over medium heat. Add the julienned zucchini, 1/2 teaspoon of minced garlic, and a pinch of herb salt. Stir-fry until the zucchini is tender and slightly softened. Once cooked, remove from heat.

This stir-fried zucchini is now ready to be a delicious garnish for your tteokguk.

Next, let’s prepare the stir-fried ground beef garnish. You’ll need 250g of ground beef.

Add 2 tablespoons of cooking oil to a clean pan and cook the ground beef. Once it starts to brown, add 3 tablespoons of soy sauce, 2 tablespoons of sugar, 1 tablespoon of plum extract, 2 tablespoons of minced garlic, 1 teaspoon of minced ginger, and a little black pepper. Stir-fry, breaking up any clumps of meat with your spatula, until the beef is cooked through and glazed with the sauce. Ensure it’s evenly distributed.

Now you have all three delicious garnishes ready for your tteokguk: stir-fried beef, stir-fried zucchini, and the egg garnish you prepared earlier. These will make your tteokguk extra special!

To ensure the rice cakes don’t stick together, soak them in cold water for about 10 minutes until they become pliable.

To make the rich beef bone broth, combine 700ml of water and 3 tablespoons of beef bone broth powder in a pot. Bring it to a rolling boil over high heat. Alternatively, you can use pre-made liquid beef bone broth for convenience.
Step 9
Drain the soaked rice cakes and add them to the vigorously boiling beef bone broth. Stir gently with chopsticks or a ladle to prevent the rice cakes from sticking to each other or the bottom of the pot.
Step 10
Once the rice cakes are tender and cooked through, your tteokguk is almost ready. Since the bone broth is already heated, you only need to cook the rice cakes.
Step 11
Ladle the warm, rich beef bone broth and a generous portion of tender rice cakes into serving bowls. This is your hearty beef bone broth tteokguk.
