Easy Homemade Black Sesame Ice Cream Recipe
Hello everyone! Today, we’re making a delicious black sesame ice cream right at home. This recipe yields a wonderfully rich and nutty ice cream that’s perfect for any occasion.
Main Ingredients- Stevia 30g (equivalent to approx. 65g sugar)
- Whole milk powder 80g
- Fresh heavy cream 406g
Flavor Enhancers- Whole milk 112ml
- Toasted black sesame powder 116g
- Whole milk 112ml
- Toasted black sesame powder 116g
Cooking Instructions
Step 1
Start by warming the milk. Place 112ml of whole milk in a microwave-safe bowl and heat for about 1 minute, until warm. In the warm milk, add 116g of toasted black sesame powder. Whisk thoroughly until it forms a smooth, lump-free paste. Ensuring the sesame powder is fully incorporated is key for a smooth texture.
Step 2
Now, let’s prepare the ice cream base. In a mixing bowl, combine 80g of whole milk powder, 406g of fresh heavy cream, and 30g of stevia for sweetness (this is about the sweetness of 65g of regular sugar). Whip this mixture using an electric mixer or a whisk until stiff peaks form. This means when you lift the whisk, the mixture should stand up in firm peaks. Whip on speed 4 for about 7 minutes.
Step 3
Gently fold the prepared black sesame paste (from step 0) into the whipped cream base. Add 3 drops of vanilla extract for an extra layer of flavor. Mix on speed 3 for about 3 minutes until just combined. Finally, add 30ml of whole milk and mix again on speed 3 for another 2 minutes to finish the ice cream base. Pour the completed mixture into a freezer-safe container, preferably glass, and freeze until solid. For the best texture, allow it to freeze overnight.
