Main Ingredients
- 1 pack Beef Brisket (approx. 200-250g)
- 2 servings Jjolmyeon Noodles (400g)
- 1/2 Apple
- 1/4 Onion
- 10 Perilla Leaves
- 1 Avocado
Spicy & Tangy Sauce
- 1 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Maesil Cheong (Plum Extract)
- 2 Tbsp Vinegar
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- Sesame Seeds (for sprinkling)
- 1 Tbsp Sugar
- 2 Tbsp Gochugaru (Korean chili flakes)
- 2 Tbsp Maesil Cheong (Plum Extract)
- 2 Tbsp Vinegar
- 1 Tbsp Soy Sauce
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- Sesame Seeds (for sprinkling)
Cooking Instructions
Step 1
First, thinly julienne half an apple. Wash it well, but you can leave the peel on for extra texture and nutrients.
Step 2
Next, thinly julienne a quarter of an onion. This adds a slight sweetness and a crisp texture to the dish.
Step 3
Wash 10 perilla leaves, pat them dry, then roll them up tightly and slice them thinly into fine strips. Their aromatic flavor is key to this jjolmyeon.
Step 4
If your julienned perilla leaves are clumped together, place them in a plastic bag and gently shake. This will separate them easily, making them ready to mix.
Step 5
Slice one ripe avocado. Cut it in half, remove the pit, peel, and then slice it into bite-sized pieces. The creamy, rich avocado balances the spiciness beautifully.

Once all your vegetables are prepped, arrange them for plating.

Let’s make the delicious sauce! In a bowl, combine 1 Tbsp sugar, 2 Tbsp gochugaru, 2 Tbsp maesil cheong, 2 Tbsp vinegar, 1 Tbsp soy sauce, 1 Tbsp gochujang, and 1 Tbsp sesame oil. Mix everything thoroughly. Sprinkle with sesame seeds for the finishing touch.

Boil plenty of water in a large pot. Once boiling, add the jjolmyeon noodles and cook for about 30 seconds to 1 minute longer than the package instructions suggest, aiming for a perfectly chewy texture. Drain the noodles and rinse them thoroughly under cold running water to remove excess starch, then drain well.
Step 9
Assemble your jjolmyeon by placing the cooked noodles in a serving bowl. Artfully arrange the prepared vegetables (apple, onion, perilla leaves, avocado) on top. Spoon the sauce over the noodles and vegetables. Gently toss everything together with chopsticks or a mixing utensil until well combined and coated.

For an extra layer of nutty flavor and crunch, consider adding sliced almonds to the mix. (Optional)
