Ingredients (makes about 7 scones)

  • 300g cake flour
  • 80g cold gourmet butter, cut into small cubes
  • 170-180g cold milk
  • 30g sugar
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1/4 tsp baking soda

Cooking Instructions

For simplicity, I’m using a food processor. First, combine the cake flour, baking powder, baking soda, sugar, and salt in the food processor. Pulse briefly to mix. Then, add the cold, cubed gourmet butter and pulse several times until the mixture resembles coarse crumbs, like coarse sand. If you’re doing this by hand, combine the dry ingredients in a bowl, then add the cold butter cubes. Use a pastry blender or your fingertips to rub the butter into the flour until it’s pea-sized and the mixture is crumbly. You can also use a scraper to break down the butter into small pieces first.

Pour the cold milk into the crumbly flour mixture.

Gently mix with a spatula until just combined into a dough. Be careful not to overmix; this is key for tender scones. Stir just enough until the dry bits are incorporated and a dough forms. If there are still dry bits at the bottom, add a little more milk. The dough will be slightly sticky.

Using a scoop or two spoons, drop portions of the dough onto a prepared baking sheet. Space them apart as you drop them. You can also pipe them if you prefer a neater shape.

Bake in a preheated oven at 200°C (400°F) for about 25 minutes, or until golden brown. If the scones start to brown too quickly, you can lower the oven temperature slightly for the remaining baking time. Once baked, remove them from the oven and let them cool completely on a wire rack.
