  • 2 Tbsp sugar
  • 4 Tbsp heavy cream
  • 1 Tbsp corn syrup (or honey)
  • 20g unsalted butter

First, let’s prepare the dough. In a bowl, cream the softened butter until smooth. Then, add the sugar and whisk together until well combined and creamy.

Sift the ground almonds and all-purpose flour into the butter mixture. Gently mix with a spatula or scraper until just combined and no dry flour is visible. Be careful not to overmix, as this can make the shortbread tough. Form the dough into a ball, wrap it, and chill in the refrigerator for a while.
