Rich & Buttery Peanut Butter Cookies
Unlock Deliciousness: Homemade Peanut Butter Cookies Recipe
I often enjoy the rich, nutty flavor of peanut butter spread on toast. Today, I’ve transformed that beloved taste into delightful cookies! These cookies are incredibly addictive, making you reach for another with every bite. You’ll be amazed at how easy it is to create such a wonderful treat at home.
Cookie Dough Ingredients- 90g unsalted butter, softened
- 150g creamy peanut butter
- 110g granulated sugar
- 100g all-purpose flour
- 3g baking soda (about 3/4 tsp)
- 2g salt (about 1/4 tsp)
- 1 large egg, room temperature
Cooking Instructions
Step 1
Start by gently softening the 90g of cold butter. You can microwave it for about 30 seconds until it’s pliable but not completely melted. Then, add 150g of room-temperature creamy peanut butter to a mixing bowl.
Step 2
Using a whisk or a spatula, cream together the softened butter and peanut butter until they form a smooth, consistent mixture. Blend them well until there are no streaks of butter or peanut butter visible.
Step 3
Add 110g of granulated sugar to the bowl. Continue mixing with the whisk until the sugar is well incorporated and the mixture becomes lighter in color and slightly fluffy. This step is key for tender cookies.
Step 4
In a small separate bowl, lightly whisk the room-temperature egg. Gradually add the beaten egg to the peanut butter mixture in two additions, mixing thoroughly after each addition. Be sure to mix well to prevent the dough from separating.
Step 5
Now, let’s prepare the dry ingredients for our cookie dough. Sift together 100g of all-purpose flour, 3g of baking soda, and 2g of salt directly into a fine-mesh sieve. Sift them over the wet ingredients to ensure even distribution and a lighter texture.
Step 6
Using a spatula, gently fold the sifted dry ingredients into the wet mixture. Use a ‘cutting’ motion to combine them until just combined and no dry flour streaks remain. Be careful not to overmix, as this can lead to tough cookies. Finally, gently bring the dough together.
Step 7
Transfer the cookie dough into a piping bag fitted with a round tip. If you don’t have a piping bag, you can simply drop rounded spoonfuls of dough onto the baking sheet. Using a piping bag helps create uniformly sized and shaped cookies.
Step 8
Line a baking sheet with parchment paper. Pipe or drop the cookie dough onto the prepared baking sheet, forming round shapes about 1.5 inches (3-4 cm) in diameter. Ensure there is enough space between each cookie to allow for spreading. Bake in a preheated oven at 180°C (350°F) for about 12-15 minutes, or until the edges are lightly golden brown.
Step 9
Once baked, let the cookies cool on the baking sheet for 2-3 minutes before carefully transferring them to a wire rack to cool completely. This resting period helps them firm up and prevents breakage.
Step 10
Congratulations! Your delicious, rich, and wonderfully soft peanut butter cookies are ready to be enjoyed. They are perfect with a glass of milk or a warm cup of coffee!
