Dough Ingredients
- 160g cake flour (sifted)
- 65g cold unsalted butter (cut into cubes)
- 80ml cold heavy cream
- 3 Tbsp granulated sugar (approx. 30g)
- 1/2 tsp salt
- 1 Tbsp dark cocoa powder (approx. 5g, sifted)
- 50g dark couverture chocolate (finely chopped into 1cm pieces)
- 1 tsp baking powder (approx. 4g)
Cooking Instructions
Step 1
In a large bowl or food processor, combine the sifted cake flour, cold cubed butter, sifted cocoa powder, sugar, and salt. If using a food processor, pulse for about 15 seconds until the mixture resembles coarse sand. If using a bowl, use your fingertips or a pastry blender to cut the butter into the dry ingredients until pea-sized pieces form. Gradually add the cold heavy cream and mix just until the dough comes together into a cohesive ball. Be careful not to overmix, as this can result in tough scones.
Step 2
Once the dough has formed, gently fold in the finely chopped dark couverture chocolate until evenly distributed. Transfer the dough onto plastic wrap, flatten it slightly into a disc, wrap it tightly, and refrigerate for at least 1 hour. This chilling step helps the butter firm up again, making the dough easier to handle and contributing to a crispier scone.
Step 3
On a lightly floured surface, gently roll out the chilled dough to a thickness of approximately 1.5cm (about 0.6 inches). Use a heart-shaped cookie cutter to cut out the scone shapes. Place the cut scones onto a baking sheet lined with parchment paper or a silicone mat, leaving some space between them. Bake in a preheated oven at 180°C (350°F) for 15 to 20 minutes, or until golden brown and fragrant. Baking time may vary depending on your oven.
