Ingredients

  • 70g All-purpose flour (sifted)
  • 110g Dark or semi-sweet chocolate (finely chopped)
  • 50g Granulated sugar
  • 6ml Vanilla extract (1 tsp)
  • 3 Large eggs (room temperature)
  • 2g Baking soda (1/2 tsp)
  • 100ml Vuco Coconut Milk Premium
  • 30ml Vuco Organic Extra Virgin Coconut Oil (2 Tbsp)
  • 30g Coconut slices (for topping)

Cooking Instructions

Step 1

Place the finely chopped chocolate in a microwave-safe bowl. Microwave in 30-second intervals, stirring between each, until smooth and melted. If any lumps remain, stir gently until fully incorporated. This should take about 1-2 minutes.

Step 2

Add the 50g of granulated sugar to the melted chocolate. Stir lightly with a whisk until the sugar is just combined. Be careful not to overmix at this stage.

Step 3

Crack the 3 room-temperature eggs into the bowl. Add the 6ml of vanilla extract (1 tsp). Whisk gently until just combined. Ensuring a thorough mix here helps prevent any eggy smell in the final brownie.

Step 4

Pour in the 100ml of Vuco Coconut Milk Premium and 30ml of Vuco Organic Extra Virgin Coconut Oil. Stir until all ingredients are evenly incorporated. Make sure the coconut oil is well blended and not clumpy.

Step 5

Add the sifted 70g of all-purpose flour and 2g of baking soda (1/2 tsp). Using a spatula, gently fold the dry ingredients into the wet ingredients until no flour streaks are visible. Avoid overmixing, as this can result in a tough brownie. Stop as soon as the flour is incorporated.

Step 6

Line your baking pan (round or square) with parchment paper. Pour the brownie batter evenly into the prepared pan. Bake in a preheated oven at 180°C (350°F) for 10 minutes. The surface should start to set.

Step 7

After 10 minutes, carefully remove the pan from the oven. Sprinkle the 30g of coconut slices evenly over the top of the batter. Return the pan to the oven and bake for an additional 10 minutes. To check for doneness, insert a toothpick into the center; it should come out mostly clean with a few moist crumbs attached. Total baking time is approximately 20 minutes.
