Begin by preparing all your ingredients for the potato gratin. Wash the potato thoroughly, peel it, and then slice it into thin rounds, about 2-3mm thick. Slicing them too thickly will increase the cooking time.

Now, let’s make the delicious cheese sauce. Pour 200ml of milk into a saucepan and heat it over medium heat. Once the milk starts to simmer, reduce the heat to low. Add the 2 slices of cheddar cheese, 1 tbsp of grated Parmesan cheese, 1/2 tsp of salt, and 1/3 tsp of black pepper. Stir gently with a spatula or whisk until all the cheese is smoothly melted. After the cheese has melted, continue to simmer on low heat for another 1-2 minutes to slightly thicken the sauce. Your sauce is ready!

Prepare another pan for sautéing. Add a little olive oil to the pan, then add the finely chopped onion and bacon. Sauté over medium heat until fragrant and lightly browned. Sautéing the onions until translucent and the bacon crispy will significantly enhance the flavor.
