Muffin Batter Ingredients

  • 110g Cake flour (sifted)
  • 7g Cocoa powder (sifted)
  • 55g Dark brown sugar
  • 70g Unsalted butter (softened to room temperature)
  • 50g Heavy cream
  • 15g Oligosaccharide (or corn syrup)
  • 45g Dark couverture chocolate (finely chopped)
  • 35g Dark chocolate chunk chips
  • 1/2 tsp Baking powder
  • 1 large Egg (room temperature)
  • Pinch of salt

Cooking Instructions

Gently heat the heavy cream until warm (do not boil). Add the finely chopped dark couverture chocolate to the warm cream and stir until it is completely melted and forms a smooth, glossy ganache. In a separate bowl, use a whisk to cream the softened butter until it’s light and fluffy.

To the creamed butter, add the dark brown sugar, oligosaccharide, and salt. Whisk until well combined and the sugar crystals start to break down slightly. Gradually add the room-temperature egg in 2-3 additions, whisking thoroughly after each addition until fully incorporated and the mixture is emulsified. Be patient to prevent the batter from separating.

In another bowl, sift together the cake flour, cocoa powder, and baking powder. Whisk lightly to combine. Pour the melted chocolate-cream mixture into the butter-sugar-egg mixture.
