How to Make Rich and Moist Cheesecake Brownies

Brownie Batter Ingredients- 1 Egg Yolk
- 40g Sugar
- 60g Butter
- 80g Dark Chocolate
- 45g Cake Flour
- 1 Tbsp (approx. 10g) Unsweetened Cocoa Powder
- 1/2 cup (approx. 40g) Walnuts, chopped
Cooking Instructions
Step 1
First, in a bowl, add the egg yolk and sugar. Gradually add the sugar in 2-3 additions while whisking vigorously until the mixture turns pale ivory and reaches a creamy consistency. This step is crucial for achieving a good brownie texture.
Step 2
In a separate bowl, melt the dark chocolate and butter together using a double boiler. Place the bowl over simmering water and stir continuously with a spatula until both are completely melted and smooth. Be careful not to let any water get into the chocolate mixture.
Step 3
Once the egg yolk mixture is pale and creamy, slowly pour in the melted chocolate and butter mixture. Gently fold it in with a spatula until evenly combined. Ensure the chocolate is well incorporated and there are no streaks.
Step 4
Sift the cake flour and unsweetened cocoa powder together into the chocolate batter. Using a spatula, gently fold the dry ingredients into the wet ingredients just until no dry streaks remain. Be careful not to overmix, as this can make the brownies tough.

Add half of the chopped walnuts (the 1/2 cup portion) to the batter and gently mix them in. Distribute the nuts evenly throughout the batter.

Line a baking pan with parchment paper. Pour the brownie batter into the prepared pan and spread it evenly to create a flat top surface.

Sprinkle the remaining chopped walnuts (the 1/3 cup portion) over the top of the batter. Then, randomly place chunks of cream cheese over the surface. As the brownies bake, the cream cheese will melt, adding delightful creamy pockets and swirls.

Bake in a preheated oven at 170°C (340°F) for about 15-20 minutes. A toothpick inserted into the center should come out with a few moist crumbs attached; it shouldn’t be completely clean.
