These are my absolute favorite cookies, and I highly recommend you try them. They’re wonderfully rich and satisfying, perfect with a glass of milk or a cup of tea. Even beginner bakers can achieve fantastic results with this simple recipe!

Cookie Ingredients

  • 110g unsalted butter, softened at room temperature for 1 hour
  • 190g peanut butter (creamy or chunky)
  • 80g granulated sugar
  • 80g brown sugar
  • 1 large egg, room temperature
  • 250g cake flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Cooking Instructions

Step 1

Start by preparing your butter. Take 110g of unsalted butter and let it sit at room temperature for about an hour until it’s soft enough to be easily pressed with your finger. Using a whisk or spatula, cream the butter until it’s smooth and fluffy. This step ensures all ingredients will combine beautifully.

To the creamed butter, add 80g of granulated sugar, 80g of brown sugar, and 1/2 tsp of salt. Continue to whisk until the sugars are well incorporated and the mixture is light and fluffy. This combination of sugars will provide a lovely depth of flavor and a wonderful texture.

Add 1 room temperature egg to the mixture. It’s crucial that the egg is at room temperature to prevent the butter from separating. Whisk vigorously until the egg is fully combined and the mixture is smooth. If your egg is cold, gently warm it by placing it in a bowl of warm water for a few minutes before using.

Now, for the star ingredient: 190g of peanut butter! Add it to the bowl and mix well with a spatula until everything is thoroughly combined and you have a consistent, smooth dough. Make sure there are no streaks of butter, egg, or peanut butter visible.

It’s time to add the dry ingredients. Sift 250g of cake flour, 1/2 tsp of baking soda, and 1/2 tsp of baking powder directly into the wet ingredients. Sifting prevents lumps and ensures a lighter, more tender cookie crumb.

Gently mix the dry ingredients into the wet using a spatula or your hands until just combined. Be careful not to overmix! Stop as soon as you no longer see any streaks of flour and the dough comes together into a cohesive ball. Overmixing can lead to tough cookies.

Divide the dough into portions and roll each portion into a ball about 3cm (approximately 1 inch) in diameter. Place the dough balls onto a baking sheet lined with parchment paper, leaving enough space between them as they will spread during baking.
