Step 1
Let’s make a delicious risotto using the Gopchang Gim we received for Chuseok! We’ll create a refined dish that will impress your guests.

First, we’ll prepare the Gim puree, which is key to the risotto’s deep flavor. Cut 3 sheets of Gopchang Gim into bite-sized pieces (approximately 5cm x 5cm). Place them in a dry pan over low heat for about 1 minute, without any oil, to toast them lightly. This removes any fishy smell and enhances their savory aroma.

Add 260g of water to the toasted Gim. Let it soak for a moment to absorb the moisture.

For a boost of umami, stir in 2 tablespoons of soy sauce. You can adjust the amount to your preference.

Add 1 tablespoon of minced garlic to deepen the flavor. The pungent aroma of garlic will beautifully complement the Gim.
