  • Carrot 1/3 (approx. 50g)
  • Zucchini 1/2 (approx. 70g)
  • Onion 1/2 (approx. 70g)
  • Potato 1 (approx. 100g)

Cooking Instructions

Begin by thoroughly washing and preparing all your vegetables. Dice the potato, carrot, zucchini, and onion into roughly 1.5-2cm cubes. Cut the pork into similar bite-sized pieces.

Heat a deep pan or pot over medium heat with a generous amount of cooking oil or butter. Add the pork and sauté until it’s nicely browned on all sides. This searing step helps to lock in the juices.

Once the pork is partially cooked, add the potatoes and carrots, which take longer to cook. Continue to sauté for another 2-3 minutes, allowing the vegetables to slightly soften and become a bit translucent.

When the potatoes and carrots are showing signs of cooking, add the onions and zucchini. Stir-fry until the onions turn translucent and the vegetables begin to release their natural juices, creating a slightly moist base. This step caramelizes the vegetables, enhancing their sweetness.

For this recipe, we’re using the ‘Curry Queen’ brand. Feel free to use any commercial curry powder mix you prefer. While following the general instructions on the package, incorporate the following steps to achieve a special depth of flavor.

If your Curry Queen package includes a Fond Board Sauce, add it at this stage. Stirring it in and lightly sautéing with the other ingredients will deepen the curry’s color and foundational taste.

Now, it’s time to add the water. Pour in enough water (about 500-600ml) to generously cover the ingredients. Bring the mixture to a boil, then reduce the heat to medium-low. Add the curry powder mix and stir until completely dissolved, ensuring there are no lumps. Let it simmer for 5-10 minutes, or until the curry thickens to your desired consistency.

Once the curry has reached the perfect thickness, turn off the heat. If your curry mix came with a separate packet of spicy powder, stir it in now according to your preference for heat. This is a great option for those who enjoy a bit of a kick.
