I made this kimchi stew by myself once and it was so delicious, I had to make it for dinner again! This recipe features a deep, savory broth, tender pork belly, and the satisfying tang of aged kimchi. It’s the perfect dish to pair with a hearty bowl of rice!
Main Ingredients- 2 portions Pork Belly (approx. 600g)
- 1 head Aged Kimchi (Muk-eunji)
- 1/2 stalk Green Onion
- 200-300ml Anchovy-Kelp Broth
Seasoning Ingredients- 2 Tbsp Soy Sauce (Jin-ganjang)
- 1 Tbsp Minced Garlic
- 1 Tbsp Gochujang (Korean Chili Paste)
- 1 ladle Anchovy-Kelp Broth (approx. 100ml)

- 2 Tbsp Soy Sauce (Jin-ganjang)

Cooking Instructions
Step 1
First, lightly rinse the pork belly under running water and pat it dry with paper towels. Trim off the hard, gristly parts (gristle bone) with a knife. Gently squeeze out some moisture from the aged kimchi and cut it into bite-sized pieces.
Step 2
Layer the prepared pork belly and aged kimchi, then roll them up tightly together. The fat from the pork belly will help tenderize the kimchi and infuse it with delicious flavor.
Step 3
Arrange the rolled pork belly and kimchi snugly in a pot. Now, let’s make the flavorful seasoning paste! In a bowl, combine 2 Tbsp soy sauce, 1 Tbsp minced garlic, 1 Tbsp gochujang, 1 Tbsp sugar, and 1 ladle (about 100ml) of anchovy-kelp broth. Mix well until thoroughly combined. (TIP: For extra spiciness, add 1-2 chopped Cheongyang peppers or 1/2 Tbsp gochugaru (red pepper flakes) to your preference. Adjust the soy sauce or sugar based on the saltiness of your aged kimchi for the best taste.)
Step 4
Pour the prepared seasoning paste evenly over the rolled ingredients in the pot. Add the sliced green onion on top and pour in about 200ml of anchovy-kelp broth. The broth should generously cover about two-thirds of the ingredients.
Step 5
Now, cover the pot and simmer over medium-low heat for 20-25 minutes. Since it might splatter, check the pot occasionally while it’s simmering. If the liquid level gets too low, add a little more broth. This cooking process will make the pork belly incredibly tender and the kimchi deeply flavorful, creating a fantastic combination.
Step 6
After simmering for about 20 minutes, your delicious kimchi stew will be ready! The flavors of the kimchi and pork belly will have melded beautifully. Enjoy this hearty stew with a warm bowl of rice!
