Step 1
Accurate measuring of ingredients is the first step to baking perfect brownies. Using a kitchen scale is highly recommended, especially for the flour and wet ingredients, as the ratio is crucial.

Place the dark chocolate in a heatproof bowl and set it over a saucepan of simmering water (double boiler method). Gently melt the chocolate, stirring occasionally. Avoid direct heat or microwave melting, as chocolate can burn easily.

While the melted chocolate is still warm, add the room temperature butter to the bowl. Stir until the butter is completely melted and incorporated into the chocolate, creating a smooth, glossy mixture.

In a separate bowl, crack the eggs. Lightly whisk them with a fork or whisk to break the yolks. No need to whip vigorously at this stage.

Add all the sugar to the whisked eggs. Using a whisk, beat the mixture until the sugar is mostly dissolved and the mixture starts to thicken slightly. This will create a smoother texture.
