Ingredients- 82g Butter
- 100g Dark Chocolate (couverture chocolate recommended)
- 1/2 Vanilla Bean (or 1/2 tsp Vanilla Extract)
- 1.5 Eggs
- 1 Egg Yolk
- 82g Brown Sugar
- 1 Tbsp All-Purpose Flour (approx. 10g)
- 1/2 Tbsp Unsweetened Cocoa Powder (approx. 5g)
- 100g Chocolate Cream Cookies (choose your favorite brand)
- 1g Salt (a pinch)
Cooking Instructions
Step 1
Begin by gently melting the butter and dark chocolate. Place them in a heatproof bowl set over a double boiler (a bowl set over simmering water) until smooth. While they melt, prepare the chocolate cream cookies: chop about half of them into larger pieces for topping, and the other half into smaller pieces to mix into the batter. This variation in size adds delightful texture.
Step 2
In a separate bowl, crack 1.5 eggs and add 1 egg yolk. Scrape the seeds from the vanilla bean and add them to the eggs. Lightly whisk the eggs with a hand mixer or whisk until just combined. Gradually add the brown sugar in two additions, continuing to whisk.

Whip the egg and sugar mixture for about 3-5 minutes until it becomes pale and slightly thickened. When you lift the whisk, the mixture should fall back in ribbons that briefly hold their shape.
