Cooking Instructions
Step 1
First, prepare the foundational ingredients for your tteokbokki. Rinse the rice cakes in cold water and drain them. Finely chop the onion. Measure out the minced pork.
Step 2
Heat a generous amount of cooking oil in a pan over medium heat. Add the chopped onion and minced pork, and stir-fry until the onion becomes translucent and the pork releases its fat. Sautéing thoroughly is key for flavor.
Step 3
When the pork is about 80% cooked and has changed color, add the prepared rice cakes to the pan. Stir gently to prevent the rice cakes from sticking to the bottom.
Step 4
Once the pork and rice cakes are somewhat combined, it’s time to make the jjajang sauce. Double-check that the pork is fully cooked at this stage.
Step 5
Now, let’s add the rich broth for the tteokbokki. Pour in about 1.5 large bowls of water (approximately 300ml). Ensure there’s enough liquid to cover the rice cakes and create a soupy consistency.
Step 6
Bring the mixture to a boil and let it simmer for about 5 minutes, allowing the rice cakes to soften and swell. Once the rice cakes are cooked and plump, mix the jjajang powder (100ml) with water (200ml) in a separate bowl until smooth, then add this jjajang paste to the pan and stir well.
Step 7
After adding the jjajang sauce, stir continuously for about 2 minutes to prevent sticking and to allow the sauce to coat the ingredients evenly. This step helps the jjajang flavor to meld beautifully.
Step 8
Once the tteokbokki reaches your desired thickness, stir in the chopped green onions and simmer briefly to finish. You can add a little sugar to taste for a touch of sweetness. Taste and adjust seasoning with salt or soy sauce if needed.
Step 9
Serve the delicious Jjajang Soupy Tteokbokki generously in a bowl. Don’t forget to mix the leftover sauce with rice – it’s incredibly tasty!
