Effortless Mushroom Curry Recipe with a Secret Ingredient
This mushroom curry is a delightful blend of tender mushrooms and a deeply savory, rich curry sauce. While delicious on its own, you can enhance the flavor by adding beef or pork. To complete this satisfying meal, top it off with a perfectly fried egg.
Ingredients- 1 handful fresh mushrooms (shiitake, oyster, king oyster, or a mix)
- 2 medium potatoes
- 1/2 medium carrot
- 1/2 medium onion
- 4 servings firm curry roux (block type, adjust to package instructions)
- 1 egg
- 1000ml water (approx. 5 cups)
- 1 Tbsp honey
Cooking Instructions
Step 1
First, prepare the vegetables that will form the base of your curry. Peel the potatoes and cut them into roughly 2cm cubes. Dice the onion and carrot into similar-sized pieces. Potatoes are essential for adding a creamy texture and making the curry more substantial.
Step 2
Next, prepare the mushrooms that will add depth of flavor and texture. Wash the mushrooms clean, trim off the tough ends, and slice them into bite-sized pieces, similar in size to the other vegetables. Using a variety of mushrooms will create a more complex and enjoyable texture.
Step 3
Heat 1 tablespoon of cooking oil in a large pan over medium heat. Add the potatoes and carrots, as they take the longest to cook, and sauté for about 5 minutes. Sautéing until the potatoes become slightly translucent will help maintain their texture when simmering later and prevent them from becoming too mushy.
Step 4
Once the potatoes and carrots are somewhat softened, add the diced onion and sauté for another minute. Adding the onion too early can cause it to break down and become overly soft. It’s best to add it after the other vegetables have started to cook. If you’re adding beef or pork, this is the time to include it and cook along with the vegetables.

When the vegetables are sautéed to your liking, pour in the measured 1000ml of water and bring it to a boil. The exact amount of water can be adjusted based on the instructions on your curry roux package. Generally, about 500ml of water is used per 100g of firm curry roux.

Once the water is boiling, add the firm curry roux and stir until it’s completely dissolved, ensuring there are no lumps. Then, add all of the prepared mushrooms to the pot.

Sometimes, curry can have a slightly bitter undertone. If you notice this, stir in 1 tablespoon of honey. The honey will neutralize the bitterness, making the curry smoother and enhancing its overall flavor profile. Continue to simmer for about 2 more minutes, stirring occasionally, until the curry is well combined and heated through. Your delicious mushroom curry is now ready!

Finally, prepare a fried egg to place on top of the curry for a rich finish. Whether you prefer a runny yolk or fully cooked, fry the egg to your liking. Serve the hot curry generously over steamed rice, topped with the fried egg, for a truly satisfying meal.
