Financier Batter Ingredients

  • 75g unsalted butter
  • 60g egg whites (about 2 large egg whites)
  • 60g granulated sugar
  • 8g honey
  • A touch of vanilla extract (optional, for enhanced flavor)
  • 35g almond flour
  • 25g cake flour (or all-purpose flour)

Sweet Topping Ingredients

  • Appropriate amount of macadamia nuts
  • Appropriate amount of white chocolate chips or chopped white chocolate

Cooking Instructions

Start by placing 75g of unsalted butter in a saucepan over medium-low heat. Gently melt the butter, stirring occasionally, until it turns a nice golden brown color. Be careful not to burn it.

Continue stirring with a spatula. Once the butter reaches a beautiful brown hue, as shown in the second photo, immediately remove it from the heat. To quickly cool the browned butter and halt the cooking process, place the bottom of the pan in a bowl of ice water. This helps develop its nutty flavor.

In a mixing bowl, add 60g of fresh egg whites. Lightly whisk them with a whisk until just frothy. Avoid over-whisking at this stage.

Add 60g of granulated sugar and 8g of honey to the whisked egg whites.

Add a few drops of vanilla extract for an extra aromatic touch. While optional, vanilla extract significantly enhances the overall flavor profile.
