Pie Crust

  • 100g cold unsalted butter (cut into cubes, approx. 3/4 paper cup)
  • 40g powdered sugar (approx. 1/2 paper cup)
  • 2 Tbsp ice-cold water or milk
  • 1 pinch salt
  • 1 egg, beaten

Walnut Filling

  • 200g walnut halves (approx. 2.5 paper cups)
  • 40g melted unsalted butter (about 2.5 Tbsp melted)
  • 120g dark brown sugar (fill paper cup to about 85%)
  • 120g corn syrup or golden syrup (approx. 2/3 paper cup)
  • 2 eggs, beaten
  • 1 tsp vanilla extract (optional)
  • 2 tsp ground cinnamon

To begin making the pie crust, sift together the cake flour, powdered sugar, and salt into a bowl. Sifting them ensures a smoother, more tender crust.

Add the cold, cubed unsalted butter to the flour mixture. Pour in the 2 tablespoons of ice-cold water (or milk) and the beaten egg. Using a whisk or spatula, cut the butter into the flour mixture by making vertical slicing motions until the ingredients are just combined. Small pea-sized pieces of butter are perfectly fine at this stage.

Remove the chilled pie dough from the refrigerator and place it on a lightly floured surface. Roll out the dough with a rolling pin to a thickness of about 3 to 4mm. Use the back of a spoon or a fork to prick the bottom of the crust all over. This prevents the crust from puffing up during baking.
