I’ve made this creamy peanut porridge using fresh peanuts harvested from my own garden. My sister raved that it’s tastier than pine nut porridge, so I decided to try it, and it turned out wonderfully!   • 1 cup soaked sweet brown rice (glutinous rice)

First, prepare your fresh raw peanuts, whether harvested from your garden or freshly bought. Begin by carefully shelling the peanuts.

Once the outer shells are removed, gently peel off the thin inner skin from the peanuts. Removing this inner skin helps to enhance the natural nutty flavor and ensures a smoother, less bitter porridge.

Soak 1 cup of sweet brown rice (glutinous rice) overnight. After soaking, drain it thoroughly in a sieve. This step ensures the rice will cook down smoothly into a creamy porridge without lumps.

In a blender, add the drained soaked sweet brown rice. Then, add the 1 1/2 cups of fresh raw peanuts, with their inner skins completely removed.

Pour 1 cup of water into the blender with the peanuts and rice. Now, it’s time to blend everything until smooth and well combined.

Pour the blended mixture of rice and peanuts into a pot. Do this gently to avoid splashing, ensuring all the creamy mixture makes its way into the pot.

To make sure no delicious mixture is left behind, add another cup of water (1 cup) to the blender jar. Swirl it around to rinse out any remaining bits of rice and peanut paste, then pour this rinsing water into the pot as well. This is a great tip for using every last bit!

Now, add an additional 3 cups of water to the pot, bringing the total liquid to 5 cups (2 cups initially blended + 3 cups added). Place the pot over medium-low heat. Stir continuously to prevent sticking to the bottom, and let it simmer gently. You can adjust the amount of water here to achieve your preferred porridge consistency.

As the porridge begins to thicken and simmer, add about 1 teaspoon of salt to season it lightly, according to your taste. Seasoning it subtly will further enhance the rich, nutty flavor of the peanuts.
