Main Ingredients
  • 1 bunch fresh spinach
  • 2L rich pork bone marrow broth (store-bought or homemade)

Seasoning Ingredients
  • 3 Tbsp homemade miso paste
  • 2 Tbsp tuna extract for umami (or soy sauce)
  • 1 tsp minced garlic
  • A little chopped green onion (optional, to taste)

Cooking Instructions

Step 1

First, trim the roots of the spinach and remove any yellowed leaves. Wash the spinach thoroughly under running water multiple times to ensure no dirt remains. Set aside once clean.

Step 2

Pour the prepared pork bone marrow broth (2L) into a pot and bring it to a boil over high heat. If using store-bought broth, follow the package instructions for heating.

Step 3

Once the broth starts boiling, place the miso paste (3 Tbsp) in a sieve over the pot and dissolve it evenly into the broth. Gently stir with a spoon to ensure the miso dissolves completely without lumps, which will result in a clearer soup.

Step 4

When the miso-infused broth comes to a rolling boil again, add the cleaned spinach. Cook until the spinach wilts. Be careful not to overcook, as this can make the spinach mushy. Just a quick simmer is perfect.

Step 5

Once the spinach is tender, add the remaining seasonings: tuna extract (2 Tbsp) and minced garlic (1 tsp). Adjust seasoning to your preference. If desired, add the chopped green onion at this stage for extra flavor. Simmer for another moment to let the flavors meld together.

Step 6

Ladle the finished Pork Bone Marrow Spinach Miso Soup into warm bowls. Enjoy this delicious and healthy soup, a perfect harmony of rich bone marrow broth and fresh spinach!
