Main Ingredients

  • 1 block Cheonggukjang (approx. 300-400g)
  • 1 Onion
  • 2 Green Onions
  • 1 package Enoki Mushrooms
  • 1 Red Chili Pepper
  • 2 Green Chili Peppers
  • 1 slice Radish (thumb-thickness)

Seasoning & Broth

  • 1 Tbsp Minced Garlic
  • Korean Soy Sauce (to taste, for seasoning)
  • 800ml Anchovy & Kelp Broth (or rice water)

Cooking Instructions

Step 1

First, thoroughly wash and prepare all the vegetables for the Cheonggukjang stew. Slice the onion into thick strips, and diagonally slice the green onions and chili peppers. Trim the base of the enoki mushrooms and separate them into strands. Slice the radish into bite-sized pieces, about the thickness of your thumb. Have the block of Cheonggukjang ready.

Pour the 800ml of anchovy and kelp broth into a pot. Add the prepared onion, enoki mushrooms, and radish. Bring to a rolling boil over high heat. As the vegetables cook, they will naturally add sweetness and depth to the broth.

Once the broth is boiling vigorously, add the block of Cheonggukjang. Use a spoon to break apart and dissolve the Cheonggukjang in the broth. Next, add the sliced green onions, red chili pepper, and green chili peppers. Reduce the heat to medium and simmer for another 5-7 minutes. When you can smell the rich aroma of Cheonggukjang, taste the stew. If it needs more saltiness, add Korean soy sauce little by little to adjust the seasoning. Be careful not to overcook, as this can diminish the unique flavor and aroma of Cheonggukjang.
