Tomato Beef Stew Recipe
  • 4 Tbsp Tomato Puree
  • 250g Korean Beef (Hanwoo)
  • 1 Sweet Potato
  • 4 cloves Garlic
  • 1 Onion
  • 7cm Green Onion
  • 3 leaves Cabbage
  • 1/4 Carrot
  • 1 handful Spinach
  • 1 tsp Grana Padano Cheese
  • 2 tsp Salt
  • Pinch of Sugar
  • Pinch of Pepper
  • Pinch of Cayenne Pepper
  • 3 Tbsp Olive Oil
  • 300ml Kelp Broth

Cooking Instructions

Step 1

Begin by preparing the vegetables for the stew. Wash the spinach thoroughly. Chop the onion, sweet potato, garlic, cabbage, and carrot into bite-sized pieces. Ensuring the sweet potato and carrot are cut to similar sizes will help them cook evenly.

Step 2

Heat 3 tablespoons of olive oil in a deep pot over medium-low heat. Add the chopped sweet potato, onion, and carrot. Sauté for 10-15 minutes until the vegetables become tender and release their natural sweetness. This slow sautéing deepens their flavor.

Step 3

Add the Korean beef, cut into bite-sized pieces, to the pot. Stir-fry the beef along with the vegetables until it’s browned on all sides. Cutting the beef into manageable pieces ensures it integrates well with the other ingredients.

Once the beef is partially cooked, add the chopped cabbage. Stir until the cabbage begins to wilt. Then, add the sliced garlic and sauté until fragrant, being careful not to burn it. Stirring regularly will ensure even cooking.

Now, it’s time to season the stew. Add a pinch of sugar and 2 teaspoons of salt to taste. For a subtle touch of heat, add a pinch of cayenne pepper. The key is a gentle, slow simmer.
