Ingredients

  • 1/4 head of well-fermented Napa cabbage kimchi
  • 1 can (150g) of tuna, drained
  • 200ml kimchi brine (approx. 1 standard paper cup)
  • 200ml water (approx. 1 standard paper cup)
  • 1 Cheongyang chili pepper (optional, for extra spice)
  • 1 Tbsp minced garlic
  • 1/6 medium onion
  • 10cm piece of green onion (white and green parts)

Cooking Instructions

Step 1

First, cut the fermented kimchi into bite-sized pieces. Place the cut kimchi, kimchi brine, and 200ml of water into a pot. Bring to a boil over high heat. This initial step helps the kimchi soften and release its refreshing flavor.

Step 1

Step 2

While the kimchi is boiling, thinly slice or roughly chop the onion. Slice the green onion diagonally or cut it in half lengthwise. These ingredients will add depth and aroma to the stew.

Step 2

Step 3

Once the kimchi starts to boil vigorously, add the drained can of tuna directly into the pot. The savory oil from the tuna will enrich the broth and enhance its flavor.

Step 3

Step 4

Now, reduce the heat to medium-low and let the stew simmer gently until the kimchi becomes tender, about 10-15 minutes. This allows the deep flavors to meld. At this stage, add the optional Cheongyang chili pepper, sliced diagonally, and 1 tablespoon of minced garlic. If you enjoy a spicier kick, don’t skip the chili pepper!

Step 4

Step 5

To adjust the seasoning, if it tastes a bit bland, add a little ‘soup soy sauce’ (guk-ganjang) or traditionally made soy sauce (jip-ganjang). Jip-ganjang is a secret ingredient that enhances the stew’s unique, savory, and rich umami flavor. Add it gradually while tasting.

Step 5

Step 6

Finally, add the pre-sliced green onions and onions to the stew. Let it boil for another moment until the vegetables are just tender. Your delicious tuna kimchi stew is now complete! Serving this warm stew will bring happiness to everyone at the table.
