  • 15 stalks of garlic scapes (approx. 200-250g)
  • 1 tsp salt (for blanching)

Seasoning Sauce

  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Jin-ganjang (Korean soy sauce for soup)
  • 1 Tbsp Mulyeot or Oligodang (corn syrup or oligosaccharide)
  • 1 Tbsp Sesame oil
  • 1 Tbsp Toasted sesame seeds (lightly crushed for better flavor)
  • 2 Tbsp Roasted soybean powder (key ingredient!)

Cooking Instructions

Step 1

First, wash the garlic scapes thoroughly and pat them dry. Then, cut them into bite-sized pieces, about 3cm long. Cutting them to a manageable length is important as they can be difficult to toss if too long.

Bring a pot of water to a boil. Once boiling, add 1 tsp of salt. Carefully add the cut garlic scapes and blanch them for about 20 seconds, stirring gently. Be careful not to overcook, as they can become mushy. Immediately after blanching, transfer the scapes to cold water and let them soak for about 30 seconds to cool down. Drain them well in a colander. This process removes any astringent taste and prevents excess moisture when seasoning, ensuring a crisp texture.

In a mixing bowl, combine 1 Tbsp Gochujang, 1 Tbsp Gochugaru, 1 Tbsp Jin-ganjang, 1 Tbsp Mulyeot (or Oligodang), 1 Tbsp sesame oil, and 1 Tbsp toasted sesame seeds. Mix well to create a flavorful seasoning sauce. For enhanced nutty flavor, lightly crush the sesame seeds before adding.

Add the blanched and drained garlic scapes to the prepared seasoning sauce. Gently toss and mix them with your hands (or chopsticks) until evenly coated. Finally, add Chef Lee Bo-eun’s secret ingredient: 2 Tbsp of roasted soybean powder. Mix thoroughly with chopsticks, ensuring the powder is well incorporated and there are no clumps. This creates a delicious garlic scape salad that is incredibly savory and satisfying!
