My husband is really into saury lately! We’ve grilled it, but today we’re making a spicy and refreshing saury stew. On a chilly day, a bowl of hot stew will have you finishing a plate of rice in no time.

Main Ingredients

  • 10 Roe Saury
  • 1 Potato (cut into large pieces)
  • 1/2 Onion
  • 1/2 pack Enoki Mushrooms
  • 1 piece Radish (about 5cm, to taste)
  • 4 Cheongyang Peppers (optional)
  • 1/2 Scallion

Seasoning

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Gochujang (generous)
  • 1 Tbsp Doenjang (generous)
  • 2 Soju Cups Mirin/Soju (approx. 200ml, can substitute with Cheongju or Mirin)
  • 1.5 Tbsp Red Pepper Flakes
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper (a dash)

Cooking Instructions

Step 1

First, let’s cleanly prepare the roe saury. This step ensures that it’s pleasant to eat later and removes any fishy smell. Use scissors to cut off the head and the tip of the tail of the saury. This helps remove the unappetizing parts, making it easier to enjoy just the flesh.

To effectively remove the characteristic fishy odor of saury, pour soju over the prepared fish and add a little water. Let it soak for a while. This process helps eliminate any unpleasant smell from the fish stew, resulting in a cleaner taste.

Now, let’s make the delicious seasoning for the stew. Prepare 2 tablespoons of soy sauce, 1 generous tablespoon of gochujang, 1 generous tablespoon of doenjang, 2 soju cups (about 200ml) of soju (or mirin/cheongju), 1.5 tablespoons of red pepper flakes, 1 tablespoon of minced garlic, and a pinch of black pepper. Combine all these seasoning ingredients in a bowl and mix them thoroughly. This seasoning blend is so flavorful that it can also be used for making spicy fish stew (maeuntang) later on!

Cut the potato and radish into large pieces to add depth to the stew. Cutting them this way prevents them from falling apart easily during cooking and provides a satisfying texture when eaten. The radish adds sweetness and a refreshing quality, while the potatoes become tender and enrich the broth’s flavor.

Start by layering the large pieces of radish and potato at the bottom of the pot. Pour 500ml of water over them. If you are making the stew with a smaller amount, like 5 saury, you can reduce the water by half to achieve a more concentrated flavor from the ingredients.

Add the prepared seasoning mixture to the pot and dissolve it well in the water. Begin to boil. Do not add the saury at this stage! If you add the saury too early and boil it, the roe and flesh can easily break apart, making the stew look messy. It’s important to let the vegetables cook thoroughly until they are tender before adding the fish.

While the stew is simmering, thinly slice the onion and cut the scallion and peppers diagonally. Once the stew starts to boil vigorously, taste it. If it’s too bland, you can add a little salt, but often the natural umami from the ingredients and the seasoning mix are enough, so you might not need extra salt! When the broth is boiling, add the prepared roe saury.

After adding the saury, arrange the prepared vegetables (onion, scallion, peppers) attractively on top. If your pot looks as full as in the picture, almost overflowing, it means you have plenty of ingredients for a delicious stew! When dealing with large saury or a generous quantity, using a spacious pot is recommended.

Initially, cover the pot and bring it to a boil over high heat. Once the stew starts boiling, remove the lid and reduce the heat to medium. Let it simmer gently, as if you are making a braised dish. A word of caution: the radish and potatoes at the bottom can stick. To prevent burning and ensure a delicious stew, give it a gentle stir occasionally as the liquid reduces. Now, all that’s left is to enjoy this flavorful dish!
